Wagon Wheel Taco Pasta


Wagon Wheel Taco Pasta was a Pinterest find.  I made this at the lake over 4th of July weekend for a big day of grilling out with friends.  This pasta tastes pretty much spot on like traditional ground beef tacos.  This pasta was a nice alternative to your typical side dish pasta salad.  I forgot to take pictures so I will link to the original recipe so you can see it if you would like but I did make a few changes.

Ingredients
1 box wagon wheel pasta
1 can black beans, rinsed and drained
1 can corn corn, rinsed.
6 Roma tomatoes, chopped
8 oz Mexican cheese blend
1.5 C salsa
1/2 C olive oil
4 T lime juice
1 T cumin
2 tsp chili powder
3 garlic cloves, minced
Salt & pepper
1/2 C cilantro, chopped
2 avocados, diced

In mason jar, mix together olive oil, lime juice, cumin, chili powder, garlic, salt & pepper.  Shake well.
Cook pasta to package instructions.
In another large bowl mix together black beans, corn, tomatoes, cheese and salsa.
Drain and rinse pasta in cool water.  Mix together with black bean mixture.
Top with olive oil mixture and cilantro.  Mix together well.
Refrigerate until serving.
Just before serving, dice avocado and mix into pasta.
