Siracha Honey Lime Marinade

Monday after we planned all our meals for the week we went to the store to buy what we needed.  We had most of the stuff either in our freezer or through our CSA so we were able to get away with only spending $38 so that is much better than our weekly grocery cost.  The primary thing we needed was chicken because  that was the main ingredient in 3 different meals for the week.  After we got home from the store we went ahead and made the Siracha Honey Lime Marinade and put 3 chicken breasts in it for tonight.  We did 3 pieces of chicken so Eric could take one to work tomorrow for lunch.

Siracha Honey Lime Marinade

Ingredients:
6 T soy sauce
4 T honey
2 T canola oil
Juice of 2 limes
4 cloves minced garlic
4 T siracha
Red Pepper flakes, a few shakes
1/4 C cilantro
Put all ingredients in a bowl & whisk together.

Place in bag with chicken breasts (or other meat of your choosing) to marinade.

We grilled this chicken and served it with our leftover loaded mashed potatoes.

Pinterest Recipes Made Reality

The topic for Jenna's challenge today is Pinterest.  The idea is to share pins that you have made/cooked/done etc.  I pin all sorts of things but the one thing that I actually follow through with is cooking recipe pins I see.  I find tons of recipes on Pinterest and I have actually made several of them.  I actually keep 2 separate boards on Pinterest - Recipes to Try & Recipes Tried/Keeping.   Below I will share some of the recipes I have pinned and my version of them.

Crash Hot Potatoes are an easy side.  I found them on Pinterest with the original source being a blog which I now follow.  I also later found they were a Pioneer Woman recipe as well.

Key West Marinade. This is a really flavorful marinade.  We used it on chicken, but I think it would also be great on a pork tenderloin.  I doubled the recipe in my version.

Chipotle Lime Shrimp Tacos.  These shrimp tacos are my very favorite meal!

Crockpot Chicken Chili.  This is a really simple crockpot recipe.  I prefer this to beef chili.  It also happens to be a Weight Watcher's Recipe.  My link below was posted last week when I was posting on the topic of freezer meals so it also includes some other freezer meals. (No picture, I'm sorry!)

Peanut Butter Banana Wraps: This is a quick snack/breakfast/dessert idea.  My aunt actually told me that she does this minus the chocolate chips and adds honey.  I think that might be pretty good too!

I hope you enjoy trying some of these recipes.  You can find my Pinterest site with the button to the right if you are looking for more recipes.

Key West Marinade

We always like to experiment with different marinades and this is a new one for us.  I originally saw it on Pinterest and we decided to give it a try

Ingredients
6 T soy sauce
2 T vegetable oil
2 T honey
3 cloves garlic, minced
Juice of 1 lime

Simply mix all ingredients together.
We are marinading chicken for the grill in this.  If we have time we will throw chicken in the marinade in the fridge the night before so it has plenty of time to soak up the flavor, but you probably need a minimum of 30 minutes.  We mixed this up Sunday night and didn't cook the chicken until Monday night. The chicken was really flavorful.
