Since I am posting on the topic of freezer meals, I thought I'd share a new recipe for chicken chili since it freezes so well. This Crockpot Chicken Chili is easy to make and we actually prefer it to chili with ground beef.
Ingredients:
1 onion chopped
16 oz can black beans
16 oz can kidney beans
16 oz can corn
16 oz can tomato sauce
2 14.5 oz cans Rotel diced tomatoes with green chilis
1 packet taco seasoning
1 T cumin
1 T Chili powder
3 chicken breasts.(I use frozen)
cilantro
Place onion, beans, corn, tomato sauce, diced tomatoes, taco seasoning and spices in crockpot. Stir together. Lay frozen chicken breasts on top of mixture. Cook on high for 5.5 hours. Remove chicken from top, shred and mix back into chili. Cook for additional 30 minutes. Just before serving add cilantro to taste.
