Dinner for 2

I was off work today so I had some time to try a new recipe.  We had some leftover dill in the fridge from some chicken salad I made last week and I remembered a recipe in one of my new cookbooks for Chicken with Mustard & Dill Sauce. (The Best Simple Recipes: America's Test Kitchen)  We had most of the ingredients in our kitchen already.  I had picked up asparagus and sweet potatoes at the Farmer's Market on Saturday so those were easy sides that we had on hand.
The chicken was easy and the sauce was so flavorful.  The sweet potatoes were just rubbed in olive oil and baked on 400 degrees for a little over an hour.  The asparagus was oven roasted with garlic and parmesan.  We both really liked this meal.  It was simple and had tons of flavor.  Eric even said "I'd pay money for this!".

Oven Roasted Asparagus

Ingredients
1 bunch asparagus
3 T olive oil
1 T lemon juice
4-5 cloves garlic, minced
2 T grated parmesan cheese
S&P

Coat asparagus evenly with all ingredients.  Spread on baking sheet and bake on 400 degrees for approximately 15 minutes or until the asparagus is tender.  I have to be honest, I did not measure any of the ingredients for this dish so these are approximations.  You could easily use more or less of any ingredient to your taste.
