Buffalo Chicken Quesadillas

Tonight we made quesadillas with our leftover buffalo chicken from last night and some of our CSA veggies from today.  The buffalo chicken was an easy 3 ingredient crockpot meal from last night.  Since we ate the buffalo chicken on sandwiches last night and Eric ate leftovers today for lunch already we needed a little something different to do with it for dinner.

Ingredients
Tortillas
Pepperjack cheese 
Red onion, thinly sliced
Pepper, thinly slicked
Butter
First we prepped all the ingredients by slicing up the red onion and pepper finely.  Also I think it works best if you grate your own cheese from the block rather than buying it shredded.  The cheese just ends up softer and seems to melt better.  We also heated our buffalo chicken up a little in the microwave so it wasn't starting out cold.
Next melt approximately 1 tablespoon of butter in a frying pan over medium-low heat.  When butter is melted place 1 tortilla in the pan.  Layer cheese, onions and peppers on tortilla.
 Next layer on your buffalo chicken. 
 Add another layer of cheese...
 And top with tortilla.  Cook until bottom is golden and cheese is melted.  I find that cheese will melt better if you have a lid to put over the pan but you don't have to do this. 
Then flip and cook the other side.  Remove from pan, slice with pizza cutter into quarters.
We had some Mexican rice with this meal.  Also we made 2 quesadillas but we should have only made 1 as we each only ended up eating half of one.  Eric is going to take the leftovers for lunch again tomorrow.  I only made 2 large chicken breasts when I originally made the buffalo chicken and we were able to get two dinners for two and two lunches for one out of it so it was a pretty good meal to last through the week.

*If you don't have premade buffalo chicken you can take any cooked, shredded chicken (rotisserie, boiled, baked) and throw it in a saucepan with a little buffalo sauce and a tablespoon or so of butter and just heat it through for 10 minutes or so and let it soak up some of the sauce.

And last but not least, I wanted to show you how jealous Layla Jane gets when I try to write a blog post.  It's a horrible picture but you can see she stands in my lap blocking me from my computer and licks my face or drops a toy on my keyboard to play fetch with.
