Grilled Buffalo Chicken Pizza

Last night brought the return of MNF and as a Redskins fan, it was our season opener.  I know when I think of football food two things that come to mind are pizza and buffalo wings.  If you have been following this blog you probably know that we have been really into grilling pizzas this summer.  So for the start of MNF we decided what better than trying to grill a new combination?  Grilled Buffalo Chicken Pizza!
 
Ingredients:
Pillsbury Artisan pizza crust - found with the crescent rolls
Pizza Sauce
Italian blend cheese
Buffalo Chicken***
Red onion, thinly sliced
Ranch

If you are making your own buffalo chicken this is the first step.  See the bottom for several ways to make buffalo chicken.

Next grill the pizza crust for a couple minutes on each side until cooked through.  Remove from grill.

Place crust on aluminum foil sprayed with cooking spray.

Cover with toppings.  For this pizza we did a thin layer of sauce, thin layer of cheese, onions & buffalo chicken and then topped it off with a little more cheese.  Putting cheese under the toppings helps hold the whole pizza together.

Then place pizza on foil back on grill and close the lid.  This tie you are just heating it until the cheese is melted and toppings are warm.  Be careful not to burn the crust at this point as it is already totally cooked.

Remove from grill and drizzle with ranch dressing.



***There are several ways you can get buffalo chicken for this pizza.
  • We grilled chicken, diced it up and then coated it with wing sauce (Frank's) on the stovetop.
  • You could use my recipe for crockpot buffalo chicken.  This would give you shredded chicken instead of chunks.  You could then use this chicken for other meals such as buffalo chicken sandwiches or quesadillas
  • You can also buy buffalo chicken tenders in the frozen food aisle.  You could bake these in the oven as directed then chunk them up for pizza toppings.

Here's our baby ready to watch her Redskins.  She may have also stolen and eaten an entire piece of pizza off the counter during the game.
