Squash, Corn & Green Onion Naan

I saw this recipe on the Elefantitas Alegres blog but it is originally from Cooking Light.  We had corn on the cob sitting on the corner and we had gotten green onions in our CSA portion last week so I only needed squash and naan to make this recipe happen. I made a few changes to the original recipe but it turned out really well.
 


Ingredients
(makes 2)
1 small yellow squash, thinly sliced
2 ears of corn, cut from the cob
3-4 large green onions, sliced (white & green parts)
Whole grain naan (2 pieces) 
1 C italian blend cheese, shredded
2 T Garlic Olive Oil
Thyme, leaves removed from sprigs
S&P
Grill naan for 1 minute on each side.  Just enough to warm it and get some grill marks on there.
Spread olive oil over warm naan.
Top with squash, then corn and green onions.
Cover with cheese.
 
Sprinkle with fresh thyme.
Sprinkle with salt and pepper.
Bake at 400 degrees for 8 minutes on an oven rack close to the top.  
Without removing from oven, switch oven to broil and broil for 2 minutes.

Grilled Pulled Pork Pizza

A few week's ago we came up with a new grilled pizza to add to our repertoire.  We smoked 4 pork shoulders for a Barbeque, Beer & Baby Talk shower for some of our friends and had leftover pulled pork.  In thinking of what we could do with the pork besides just eating pulled pork sandwiches, we came up with Grilled Pulled Pork Pizzas.
 
Ingredients:
Pillsbury Artisan Pizza Crust
BBQ Sauce - Our favorite sauce
Mozzarella Cheese or Italian Blend, shredded
Cilantro, chopped
Red Onion, thinly sliced
 
Cook Pillsbury Artisan Pizza Crust by rolling it out and placing it directly on the grill. Grill on each side for a few minutes until cooked through.
Spray a piece of aluminum foil with cooking spray and place cooked crust on top.
Spread crust with BBQ sauce.
Top with pulled pork, red onion, and cilantro. 
Sprinkle generously with cheese.  We typically put the cheese on last because it seems to help hold everything together but you can certainly do cheese then toppings if you prefer.
Place entire pizza back on grill.  Close lid and cook until cheese is melted and toppings are warm.

Grilled Buffalo Chicken Pizza

Last night brought the return of MNF and as a Redskins fan, it was our season opener.  I know when I think of football food two things that come to mind are pizza and buffalo wings.  If you have been following this blog you probably know that we have been really into grilling pizzas this summer.  So for the start of MNF we decided what better than trying to grill a new combination?  Grilled Buffalo Chicken Pizza!
 
Ingredients:
Pillsbury Artisan pizza crust - found with the crescent rolls
Pizza Sauce
Italian blend cheese
Buffalo Chicken***
Red onion, thinly sliced
Ranch

If you are making your own buffalo chicken this is the first step.  See the bottom for several ways to make buffalo chicken.

Next grill the pizza crust for a couple minutes on each side until cooked through.  Remove from grill.

Place crust on aluminum foil sprayed with cooking spray.

Cover with toppings.  For this pizza we did a thin layer of sauce, thin layer of cheese, onions & buffalo chicken and then topped it off with a little more cheese.  Putting cheese under the toppings helps hold the whole pizza together.

Then place pizza on foil back on grill and close the lid.  This tie you are just heating it until the cheese is melted and toppings are warm.  Be careful not to burn the crust at this point as it is already totally cooked.

Remove from grill and drizzle with ranch dressing.



***There are several ways you can get buffalo chicken for this pizza.
  • We grilled chicken, diced it up and then coated it with wing sauce (Frank's) on the stovetop.
  • You could use my recipe for crockpot buffalo chicken.  This would give you shredded chicken instead of chunks.  You could then use this chicken for other meals such as buffalo chicken sandwiches or quesadillas
  • You can also buy buffalo chicken tenders in the frozen food aisle.  You could bake these in the oven as directed then chunk them up for pizza toppings.

Here's our baby ready to watch her Redskins.  She may have also stolen and eaten an entire piece of pizza off the counter during the game.

Siracha Honey Lime Marinade

Monday after we planned all our meals for the week we went to the store to buy what we needed.  We had most of the stuff either in our freezer or through our CSA so we were able to get away with only spending $38 so that is much better than our weekly grocery cost.  The primary thing we needed was chicken because  that was the main ingredient in 3 different meals for the week.  After we got home from the store we went ahead and made the Siracha Honey Lime Marinade and put 3 chicken breasts in it for tonight.  We did 3 pieces of chicken so Eric could take one to work tomorrow for lunch.  
 
Siracha Honey Lime Marinade

Ingredients:
6 T soy sauce
4 T honey
2 T canola oil
Juice of 2 limes
4 cloves minced garlic
4 T siracha
Red Pepper flakes, a few shakes
1/4 C cilantro 
Put all ingredients in a bowl & whisk together.


Place in bag with chicken breasts (or other meat of your choosing) to marinade. 

We grilled this chicken and served it with our leftover loaded mashed potatoes.

Grilled Pizzas

We are at the lake this weekend and that usually means cooking on the grill.  Friday night our friends Travis & Erika came down and we ate grilled pizzas.  I am so glad that we discovered Pillsbury Artisan Crust and it has become a new staple for us.  Neither of these recipes are new to the blog, but I made them both for dinner Friday night and we just love them both.  We have also just made a regular pizza like this with pepperoni, etc but these two are far better in my opinion.

BBQ Chicken Pizza & a Weekend at the Lake

We spent the weekend at the lake with some friends.  We had a great weekend and I only wish we could do it more.  Friday night Eric and I headed down to the lake before everyone else to get the house opened up and ready for the weekend.  We decided to grill pizzas after our experience with the Grilled Eggplant Pizza a couple weeks ago that we liked so much.  We made 2 pizzas because we wanted totally different types of pizza.  Eric made his with turkey pepperoni, roasted red peppers and banana peppers but I wanted to try grilling BBQ Chicken Pizza.  Growing up whenever we went shopping at Tyson's Corner Mall, my friends and I would always want to go eat at the Rainforest Cafe or California Pizza Kitchen.  This is my version of California Pizza Kitchen's BBQ Chicken Pizza which I have always loved. I didn't look at their recipe so I'm not sure if it's actually the same but it was good and that is all that matters.  
Ingredients:
1 Pillsbury Artisan Pizza Crust
1/4 C BBQ sauce (our favorite is Bone Suckin' Sauce, Thicker Style BBQ)
1/4-1/2 C Italian Blend cheese
1/8 C diced red onion
3 T cilantro, chopped
4 oz. grilled chicken, diced (to save time I bought a package of pre-grilled chicken strips and diced them)
(All measurements are approximations as I did not measure anything and more or less of each could be used to your liking)

First prepare the crust on the grill.  Grill each side for 2-3 minutes, being careful not to burn the crust.
Top with BBQ sauce, cheese, onion, cilantro, chicken and more cheese.
Place on greased aluminum foil and place back on grill with the lid closed until the cheese is melted and toppings are warm.

Layla, always the picky eater, stole an eggplant off the counter and had that...
